Cheeky Chickpea Salad

Ingredients
  

  • 2 large cloves of garlic
  • 1 Thai chili
  • 2 large cans of chickpeas
  • Zest and juice of two lemons

Method
 

  1. Rinse the canned chickpeas to remove excess starch, drain, and set aside.
  2. Finely chop the garlic and chili, and zest the lemons.
  3. Put everything together: Mix all the ingredients into a bowl. Squeeze the juice from the zested lemons. Serve right away, or enjoy warm or cold.

Notes

You may add some salt to taste, but I find this hardly necessary.
