Cheeky Chickpea Salad
Chickpeas are great to fill a grumbling stomach. They’re cheap, they’re filling, they’re easy to work with, and they’re delicious! These elements come to a new level of importance at this time when we need to be wiser on how we consume and spend for food due to the COVID-19 pandemic. This recipe—my Cheeky Chickpea Salad—is a perfect example of that.
This salad is so easy because it requires no cooking at all. Simply put all the ingredients together into a bowl and off you go to the dining table. If you are feeling adventurous and have some time and energy to spare, you can add some roasted red bell peppers (I char them on the stove and chop them into cubes), some fried local sausages or longganisa, or both. Lastly, I always use canned chickpeas to make life so much easier.
This dish can serve as a salad, a replacement to rice, or even stand on its own. It can be enjoyed as a post-workout meal, given its high protein content. I hope you’ll enjoy this as much as I do!
Cheeky Chickpea Salad
Ingredients
- 2 large cloves of garlic
- 1 Thai chili
- 2 large cans of chickpeas
- Zest and juice of two lemons
Instructions
- Rinse the canned chickpeas to remove excess starch, drain, and set aside.
- Finely chop the garlic and chili, and zest the lemons.
- Put everything together: Mix all the ingredients into a bowl. Squeeze the juice from the zested lemons. Serve right away, or enjoy warm or cold.

As with many other food bloggers out there, I am no chef. I come with no culinary training whatsoever, and so it’s not at all surprising that my kitchen adventures are punctuated by frequent mishaps and blunders. Yet, there are recipes that I seem to make much better than others. And so, after years of prodding from family and friends, here I am, sharing the little that I know.
Why “gourmand,” you ask? Simply because I like making and eating good food. I can eat a lot, too—so there you go!
