Ingredients
  • 3 cloves minced garlic
  • 2 tablespoons extra virgin olive oil
  • Juice of ½ lemon
  • 1 ½ tsp rosemary
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 zucchini, sliced into disks
Instructions
  1. Whisk together the garlic, olive oil, lemon juice, rosemary, salt and pepper. Adjust the seasoning as desired.
  2. Toss in the slices of zucchini. Make sure to coat each piece with the dressing.
  3. Grease a grill pan with a bit of oil.
  4. Grill the zucchini for two minutes on each side.
  5. Serve warm.
Notes
Cooking time may vary depending on the size of your grill pan.
